  • 4 ¼ cups (1000 ml)still mineral water, low mineral content
  • 1 ½ tsp (3 g)agar powder

  • ¼ cup (60 ml)water

Baking tools for this recipe

Instructions

  1. Rinse four 250 ml hemisphere molds with cold water and set them on a tray.
  2. Whisk the agar into the cold mineral water in a saucepan and let it sit for 5 minutes.
  3. Heat over medium, stirring gently, to a boil and simmer for 2 minutes until the agar is fully dissolved. Skim any foam.
  4. Ladle the hot liquid slowly into the molds, avoiding bubbles. Cool 20 minutes at room temperature.
  5. Refrigerate for 3 hours until fully set but still very soft.
  6. For the syrup, simmer the brown sugar, water and salt for 5 minutes until lightly syrupy, then cool completely.
  7. Release each dome onto a plate by loosening the edge with a fingertip, and serve within 20 to 30 minutes with kinako and syrup on the side.

Tips

  • Agar sold in the US sets cloudier and firmer than Japanese kanten; use a very small dose and still water for clarity.
  • Keep the dome cold until the moment of serving; at room temperature it weeps and slumps.
  • Add kinako at the table, because it dissolves into the jelly if added early.
  • Good with green tea.
