Baking tools for this recipe

Instructions

  1. Mix the dough flour and salt, add the egg, melted butter and warm water, and knead 5 minutes until smooth. Cover and rest 30 minutes.
  2. Heat the oven to 400 F (200 C) and grease a 12-cup muffin tin.
  3. Roll the dough very thin (about 1/16 inch / 1.5 mm), cut 4 1/2-inch (11 cm) rounds, and press one into each cup so the edge stands slightly above the rim.
  4. Beat the drained cheese, sugar, yolks, flour and cinnamon until smooth.
  5. Fill each shell about three-quarters full.
  6. Bake 18 to 20 minutes until the edges are golden and the filling is set with dark spots. Cool in the tin 5 minutes, then move to a rack.
  7. Dust with cinnamon. Serve at room temperature.

Tips

  • Drain the cheese in a fine sieve for 30 minutes so the filling is not watery.
  • Roll the shell thin; it should be tender and crisp.
  • Dark flecks on top are traditional.
  • Bake until the filling is set and registers 160 F (71 C) because it contains egg yolks.
