Baking tools for this recipe
Instructions
- Heat the oven to 350 F (175 C). Grease and line an 8-inch springform pan.
- Beat the eggs and sugar on high for 8 to 10 minutes until pale, thick and tripled, so a ribbon stays on the surface. Sift the flour, starch and baking powder over and fold in gently in two additions.
- Pour into the pan and bake 25 to 30 minutes until golden and springy. Cool in the pan 10 minutes, then on a rack. Cool completely, and cut into 3 layers.
- Pastry cream: whisk the yolks, sugar and cornstarch. Heat the milk to steaming, whisk into the yolks, return to the pan and cook, whisking, until it bubbles for 1 minute. Off the heat, stir in vanilla and butter. Press plastic on the surface and chill completely.
- Whip 400 ml of the cream with the powdered sugar and vanilla to soft stiff peaks. Whip the remaining cream separately only to soft peaks for the dome.
- Set the bottom layer on a plate and spread with the jam, then half the pastry cream. Add the second layer, the rest of the pastry cream, then the third layer. Mound all the whipped cream over the top and sides, shaping a high dome. Refrigerate 1 hour.
- Knead the marzipan with the green coloring until even. Roll on powdered sugar to a 14-inch circle about 1/8 inch thick.
- Drape the marzipan over the dome, smooth gently from the top down and trim the excess at the base. Dust lightly with powdered sugar. Chill at least 3 hours before serving, cut with a hot knife.
Tips
- Beat the eggs well, the sponge has no other leavening to speak of.
- Chill the pastry cream completely before layering.
- Roll the marzipan between sheets of parchment dusted with powdered sugar if it sticks.
- Cook the pastry cream until it bubbles so the yolks pass 160 F (71 C). Keep this cream-filled cake refrigerated.
