Instructions

  1. Add the unsweetened coconut milk beverage to a high-speed blender.
  2. Add the frozen pineapple chunks, chopped apple, fresh mint leaves, fine sea salt, and vanilla extract.
  3. Add the ice cubes.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds, until completely smooth.
  5. Check consistency. Blend in 1–2 tablespoons additional liquid if too thick, or a few extra ice cubes/frozen fruit if too thin.
  6. Pour into a 16-ounce glass and serve immediately.
