Instructions

  1. Line a rimmed baking sheet with parchment.
  2. Set aside a third of the dark chocolate. Melt the rest in a heatproof bowl over barely simmering water (or in 20-second microwave bursts), stirring, until it reaches 115°F.
  3. Remove from the heat and stir in the reserved chocolate until melted and the chocolate cools to 88 to 90°F. It's tempered when a streak on parchment sets glossy and firm within 5 minutes.
  4. Stir in the salt.
  5. Spread the dark chocolate into a 9-by-12-inch rectangle and let set until just firm, about 15 minutes.
  6. Set aside a third of the white chocolate. Melt the rest in a heatproof bowl over barely simmering water (or in 20-second microwave bursts), stirring, until it reaches 105°F.
  7. Remove from the heat and stir in the reserved chocolate until melted and the chocolate cools to 84 to 86°F. It's tempered when a streak on parchment sets glossy and firm within 5 minutes.
  8. Spread the white chocolate over the first layer.
  9. Right away, scatter the peppermint candies over the top and press gently so they stick.
  10. Let set at cool room temperature until firm, about 1 hour, then break into pieces.
