Okinawan Brown Sugar Muchi
A chewy steamed rice cake sweetened with dark brown sugar, wrapped in leaves so it picks up a gentle herbal fragrance. Our version uses banana leaf or parchment when shell ginger leaves are hard to find. Makes 10 cakes in about 40 minutes.

Baking tools for this recipe

Instructions

  1. Dissolve the brown sugar in the lukewarm water, stirring until no crumbs remain.
  2. Put the rice flour in a bowl and add the sugar water a little at a time, kneading until the dough is smooth and about as soft as an earlobe. Add a teaspoon of flour if sticky or a teaspoon of water if dry.
  3. Lightly oil the shiny side of each leaf or parchment piece so the cooked cakes release easily.
  4. Divide the dough into 10 pieces. Roll each into a rope about 4 inches (10 cm) long and set it across the middle of a leaf.
  5. Fold the long edges over the dough, then fold in both ends and tie with kitchen twine or tuck the seam underneath.
  6. Bring water to a boil in a steamer. Steam the bundles over medium-high heat for 15 minutes, until the dough turns glossy and translucent.
  7. Rest the bundles 10 minutes. Unwrap while warm and eat right away, or wait a few hours for the cakes to firm up and release more cleanly.

Tips

  • Use glutinous (sweet) rice flour only. Regular rice flour will not turn chewy.
  • The cakes are softest warm. Rewarm hardened muchi in a steamer or microwave for 20 seconds.
  • Dark unrefined sugar gives the traditional deep flavor; light brown sugar works but tastes milder.
  • Good with hot green tea.
