Baking tools for this recipe
Instructions
- Line an 8 x 4 inch (20 x 10 cm) loaf pan with plastic wrap or rinse it with cold water.
- Whisk the agar powder into the water in a small pot and let it soak 5 minutes.
- Bring to a boil over medium heat, stirring, and simmer 2 minutes until the agar is fully dissolved.
- Add the sugar and stir until dissolved. Stir in the bean paste a spoonful at a time until smooth.
- Cook over medium heat 8 to 10 minutes, stirring constantly, until the mixture is thick and falls slowly from the spatula.
- Pour into the pan, smooth the top and cool at room temperature for 30 minutes.
- Refrigerate at least 2 hours, until firm, then slice into 12 pieces.
Tips
- Use agar powder, not gelatin; gelatin would not give the firm texture.
- Leave the slices uncovered at room temperature a few hours to form the thin sugary crust.
- Strain through a sieve if the bean paste leaves lumps.
- Good with green tea.
