Baking tools for this recipe

Instructions

  1. Mix the flour, yeast, sugar and salt. Stir in the warm water and 15 ml oil to a soft, slightly sticky dough.
  2. Knead 6 to 8 minutes until smooth. Place in an oiled bowl, cover and rise 1 hour until doubled.
  3. Divide into 8 pieces and shape into balls. Cover and rest 20 minutes so they relax.
  4. Heat the frying oil to 375 F (190 C) in a wide, heavy pot, at least 2 inches (5 cm) deep.
  5. Stretch each ball on a lightly floured surface into a rough 6-inch (15 cm) round, thinner in the center. Poke a small hole in the middle to keep it flat.
  6. Fry 1 round at a time for 1 to 2 minutes per side, until deep golden brown, keeping the oil at 360 to 375 F (182 to 190 C). Drain on paper towels.
  7. Dust immediately with powdered sugar or cinnamon sugar and eat while hot.

Tips

  • Keep the oil temperature steady; too cool makes greasy dough, too hot browns before the center cooks.
  • Stretch gently; tearing the dough makes it fry unevenly.
  • Do not leave the pot unattended and never add wet dough to hot oil in a rush.
  • Good with hot chocolate.
