Instructions
- Stir the flour, yeast, sugar and salt together in a large bowl. Add the warm water and melted butter and mix to a shaggy dough.
- Knead on a lightly floured counter for about 8 minutes (or 5 minutes in a stand mixer with the dough hook) until smooth and springy.
- Place in an oiled bowl, cover and let rise at room temperature for 1 to 1 1/2 hours, until doubled.
- Divide into 8 pieces of about 100 g. Stretch each gently into a flat disc about 1/2 inch (1 cm) thick, cover with a towel and rest 15 minutes on a floured tray.
- Heat the oil and butter in a heavy skillet over medium-low heat, about 325 F (160 C). A pinch of dough should sizzle gently.
- Fry 3 or 4 toutons at a time, without crowding, for 3 to 4 minutes per side. They puff right away; turn once they are deep golden and the dough is cooked through.
- Drain briefly on paper towels. Serve hot, split or whole, with a pat of butter and a generous pour of molasses.
Tips
- Keep the heat at medium-low; too hot and the outside burns before the center cooks.
- Stretch the discs thin enough (about 1/2 inch) so they cook through as they puff.
- Leftover white bread dough works just as well, 80 to 100 g per touton.
- Good with hot tea or coffee.
