Baking tools for this recipe

Instructions

  1. Whisk the flour, sugar, baking powder and spices. Stir in the raisins to coat.
  2. Add the butter, molasses and hot water and mix to a stiff dough.
  3. Scald a pudding cloth or cotton bag in boiling water, wring and dust with flour. Place the dough in it and tie, leaving about 1 inch (2.5 cm) for expansion.
  4. Lower into a pot of boiling water with a plate underneath to avoid scorching. Boil gently 1 hour 30 minutes, topping up water as needed.
  5. Lift out, cool 10 minutes, and unwrap.
  6. For the sauce, simmer the molasses, butter and water 5 minutes.
  7. Slice the pudding and serve warm with the sauce.

Tips

  • Keep the water at a steady simmer and covered pudding fully.
  • A greased heat-safe bowl wrapped in foil also works.
  • Raisins can be swapped with currants.
  • Boil the pudding until it is firm and hot throughout.
