Instructions

  1. Mix the flour, 50 g sugar, yeast and salt. Add the warm milk, 60 g butter and the egg and knead 8 minutes into a soft, smooth dough.
  2. Cover and let rise 1 hour, until doubled.
  3. Butter a 10-cup Bundt pan. Stir the coating sugars and cinnamon together in a shallow bowl and put the 115 g of melted butter in another.
  4. Divide the dough into about 60 pieces (roughly 1 inch / 2.5 cm). Dip each in butter, then roll in the cinnamon sugar and layer in the pan.
  5. Cover loosely and rise 30 minutes, until puffy. Heat the oven to 350 F (175 C).
  6. Melt the caramel butter and 100 g brown sugar together, boil 1 minute and pour over the dough in the pan.
  7. Bake 35 to 40 minutes, until deep golden and a thermometer reads 190 F (88 C). Tent with foil if browning fast.
  8. Cool 5 minutes, then invert onto a plate. Serve warm, pulled apart by hand.

Tips

  • Do not wait longer than 5 minutes to invert or the caramel sticks.
  • Place the pan on a baking sheet to catch drips.
  • Add chopped pecans between the layers if you like.
  • Good with coffee.
