Baking tools for this recipe

Instructions

  1. Heat the oven to 425 F (220 C) with a rack in the middle. Butter four 6-ounce ramekins well and dust the insides with cocoa, tapping out the excess.
  2. Melt the chocolate and butter together in a bowl over simmering water, stirring until smooth. Cool 5 minutes.
  3. Whisk the eggs, yolks, sugar, vanilla and salt 2 minutes until slightly thick. Whisk in the chocolate mixture, then fold in the flour.
  4. Divide among the ramekins and set on a baking sheet.
  5. Bake 11 to 13 minutes, until the edges are firm and the center is still soft and jiggly.
  6. Let stand 1 minute, run a knife around the edge, invert onto a plate and lift off the ramekin. Dust with powdered sugar and serve right away.

Tips

  • Oven temperatures vary; test one cake first to find your time.
  • Butter and cocoa the molds thoroughly so the cakes release.
  • Serve immediately; the center sets as it cools.
  • The center is intentionally soft, so eggs are not fully cooked; use pasteurized eggs and avoid serving to young children, pregnant women, older adults or anyone with a weakened immune system.
