A very thick, mild Japanese starch syrup; the traditional method turns steamed glutinous rice into sugar with malt. Serve it with rice cakes.
Mizuame (Homemade Rice Malt Syrup)
Ingredients
Scales from a half to a double batch; give a bigger batch a little more time.
- 7 oz (200 g)glutinous (sweet) rice, rinsed

- ⅔ cup (100 g)dry barley malt powder (diastatic)
- 7 tbsp (100 ml)warm water
Baking tools for this recipe
Instructions
- Cook the rice with 500 ml of the water in a covered pot for 20 minutes, until very soft. Add 300 ml more hot water and stir into a loose porridge.
- Cool the porridge to 140 F (60 C), no hotter or the malt enzymes are damaged.
- Stir the malt powder into the warm water, then mix into the porridge until even.
- Hold at 130 to 140 F (55 to 60 C) for 6 to 8 hours, in a slow cooker on warm, an oven on its lowest setting, or a sous vide bath. Stir every 2 hours. The mixture will thin and taste sweet.
- Strain through a cloth-lined sieve, pressing out the liquid; discard solids.
- Pour the liquid into a wide pot and boil gently for 5 minutes. Skim the foam.
- Simmer on low, uncovered, 40 to 60 minutes, until reduced to about 250 ml and thick enough to coat a spoon. It thickens more as it cools.
- Pour into a clean, dry jar while hot and cool completely before covering.
Tips
- Use malt powder labeled diastatic or enzymatic; non-diastatic baking malt will not convert the starch.
- Keep the holding temperature steady; too cool slows conversion and invites spoilage.
- The syrup is milder than corn syrup and works as a glaze or sweetener.
- Holding the mixture at 130 to 140 F (55 to 60 C) for hours is near the temperature danger zone, so keep it above 130 F and finish by boiling for at least 5 minutes. Refrigerate the syrup.
