Instructions

  1. Place the milk chocolate in a heatproof bowl.
  2. Heat the cream in a small saucepan until it just simmers around the edges, then pour it over the chocolate. Let stand for 3 minutes without stirring.
  3. Add the salt and vanilla and stir from the center outward until smooth and glossy.
  4. Let stand at room temperature until thick enough to pipe, 1 to 2 hours (or refrigerate for 30 to 45 minutes, stirring every 10 minutes). For a lighter filling, beat it for 1 minute once thickened.
  5. Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.
