Baking tools for this recipe

Instructions

  1. Whisk the flour, sugar and salt in a bowl.
  2. Beat in the eggs, melted butter, milk and vanilla until the batter is smooth and pourable.
  3. Heat a pizzelle press, waffle cone iron or marquesita iron until hot and lightly greased.
  4. Cook about 2 tablespoons of batter at a time for 60 to 90 seconds, until deep golden and crisp.
  5. Working quickly while the wafer is pliable, sprinkle a strip of cheese along one edge and spread with a spoonful of cajeta.
  6. Roll tightly into a tube and hold seam-side down a few seconds. Repeat with the remaining batter.
  7. Serve immediately so the wafer stays crisp.

Tips

  • Have the cheese and cajeta ready before cooking the first wafer; it firms in seconds.
  • Roll within 15 seconds or the wafer cracks.
  • Try chocolate spread or jam in place of cajeta.
  • Good with hot chocolate.
