Baking tools for this recipe

Instructions

  1. Beat the quark, softened butter, egg and salt until smooth. Stir in the flour and semolina to form a soft dough. Chill 30 minutes.
  2. Cut each apricot along the seam, remove the pit and fill the cavity with about 5 g of sugar. Press closed.
  3. Divide the dough into 8 pieces. Flatten each in your palm, wrap around an apricot and roll into a smooth ball with floured hands.
  4. Bring a wide pot of salted water to a gentle simmer.
  5. Slide in the dumplings, cover loosely and simmer 12 to 15 minutes, turning once, until they float and the dough is firm.
  6. Melt the butter in a skillet, add the breadcrumbs, sugar and cinnamon and toast over medium heat 4 minutes, stirring, until golden.
  7. Lift out the dumplings with a slotted spoon, drain well and roll in the warm crumbs.
  8. Dust with powdered sugar and serve right away.

Tips

  • Use ripe but firm apricots; very soft ones burst while simmering.
  • Keep the water at a gentle simmer, not a hard boil.
  • Moisten your hands with water to seal any cracks in the dough.
  • Good with vanilla ice cream or a glass of sweet white wine.
