Instructions

  1. Combine the maple syrup and water in a small saucepan.
  2. Add the split vanilla bean pod and the scraped seeds to the saucepan.
  3. Heat the mixture over medium heat, stirring occasionally, until it begins to simmer.
  4. Reduce heat to low and let the syrup simmer gently for 8–10 minutes to infuse the vanilla flavor without boiling vigorously.
  5. Remove from heat and let the syrup cool slightly with the vanilla pod still in it for an additional 10 minutes to deepen the flavor.
  6. Remove the vanilla bean pod.
  7. Pour the syrup into a clean glass jar or bottle and let it cool completely before storing.
  8. Store in the refrigerator and shake well before each use.
