Instructions

  1. In a bowl whisk cocoa and sugar into the measured hot water until glossy and completely dissolved.
  2. Add maple syrup and whisk or briefly blend until incorporated; fully melt chopped chocolate if it is the chosen flavor.
  3. Add cold milk and cooled espresso; mix until uniform, then rapidly cool the mixture below 40°F / 4°C if it is warm.
  4. Divide the ice between two tall glasses and pour over the cold cocoa mixture.
  5. Top each drink with 15 ml cold heavy cream and serve immediately.

Tips

  • Always make a smooth cocoa slurry first to avoid gritty powder in cold milk.
  • Cocoa itself contains some caffeine; mocha versions additionally contain coffee, and check product labels for exact caffeine amounts.
  • Perishables must not sit at room temperature longer than 2 hours, or 1 hour above 90°F (32°C).
  • Good with cookies, cakes, and pastries.
