Instructions

- Strain the lavender cream mixture through a fine mesh sieve into a clean saucepan to remove the lavender buds.
- In a medium bowl, whisk the egg yolks until smooth.
- Slowly pour about half of the warm cream mixture into the egg yolks while whisking constantly to temper the eggs.
- Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over low-medium heat, stirring constantly with a wooden spoon or heatproof spatula, until the custard thickens and coats the back of the spoon, reaching 175°F (79°C). Do not boil.
- Remove from heat and stir in the honey and pure vanilla extract until fully incorporated.
- Transfer the custard to a clean bowl, cover with plastic wrap pressed directly onto the surface, and chill in the refrigerator for at least 4 hours or overnight.
- After chilling, churn the custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
