Baking tools for this recipe

Instructions

  1. Crush any lumps of kudzu starch and stir it with the sugar and water in a small saucepan until fully dissolved. Let it sit 10 minutes.
  2. Cook over medium-low heat, stirring constantly with a spatula. It turns lumpy and cloudy, then suddenly gets sticky and translucent, about 6 to 8 minutes.
  3. Keep stirring 2 more minutes, until fully clear and glossy.
  4. Scrape into a wet, shallow container about 6 x 6 inches (15 x 15 cm). Smooth the top and cool in ice water for 20 minutes until set.
  5. Meanwhile, simmer the brown sugar and water 3 to 4 minutes into a thin syrup and cool.
  6. Turn out onto a wet board, cut into 1-inch (2.5 cm) cubes, and toss in the kinako. Serve with syrup.

Tips

  • Cook constantly stirring or it scorches on the bottom.
  • Do not refrigerate for long; the cubes turn hard and cloudy.
  • True kudzu starch is expensive; potato starch will not set the same way.
  • Good with cold green tea.
