Baking tools for this recipe

Instructions

  1. Steam the grated coconut with a pinch of salt for 5 minutes, then cool. This keeps it fresh longer.
  2. Mix the rice flour, tapioca starch and salt. Add the pandan juice slowly, kneading to a smooth soft dough like clay. Add a little flour or juice to adjust.
  3. Pinch off a 15 g piece, flatten, and place about 1/2 teaspoon of chopped palm sugar in the middle.
  4. Seal the dough around the sugar, making sure there are no gaps, and roll into a smooth ball.
  5. Bring a large pot of water to a boil. Drop in the balls in batches. They sink first.
  6. When they float, cook 1 more minute, then lift out with a slotted spoon into a bowl of cold water for 10 seconds.
  7. Drain and roll in the coconut. Serve soon.

Tips

  • Finely chop the sugar so it melts quickly; big pieces split the dough.
  • Seal tightly or the sugar leaks and the water turns brown.
  • Do not overcook; a minute past floating is enough.
  • Good with black tea.
