Baking tools for this recipe

Instructions

  1. Combine the water, palm sugar, pandan leaves and cinnamon stick in a medium pot. Bring to a gentle simmer over medium heat and stir until the sugar dissolves, about 3 minutes.
  2. Add the sweet potato chunks and simmer gently for 10 to 12 minutes, until a knife slides in with just a little resistance.
  3. Stir in the coconut milk and salt. Keep the heat low so the coconut milk does not split; it should barely bubble.
  4. Add the banana pieces and cook 5 to 7 minutes, until they are soft but still hold their shape.
  5. Taste and add a little more sugar or a pinch of salt if needed. Remove the pandan and cinnamon.
  6. Ladle into bowls while warm. Kolak is also good at room temperature.

Tips

  • Add the banana last so it stays in pieces instead of turning to mush.
  • Palm sugar varies in sweetness, so add it in two halves and taste.
  • Frozen pandan leaves work well; a drop of pandan extract is a fallback.
  • Good with hot tea.
