Baking tools for this recipe
Instructions
- Separate the eggs and place only the yolks in a small mug or bowl, saving the whites for another use.
- Add the sugar, plus the cocoa if using.
- Beat with a whisk or hand mixer for 3 to 5 minutes until the mixture is pale, thick and creamy and no sugar grains remain.
- Scrape down the sides once or twice so every bit of yolk is beaten evenly.
- Taste; if it feels gritty, beat for another minute.
- Serve immediately with a spoon, dusted with extra cocoa if you like.
Tips
- Beat until you cannot feel sugar grains; that is what makes it creamy.
- A teaspoon of honey instead of sugar is a classic variation.
- Make just before serving; it loosens as it stands.
- This dessert is not cooked. Use pasteurized eggs only, and avoid serving it to young children, pregnant people, older adults or anyone with a weakened immune system.
