Joulutorttu (Finnish Plum Jam Christmas Pinwheels)
Joulutorttu are crisp, flaky pinwheels with a glossy dark plum center, a staple of Finnish Christmas tables. We use store-bought puff pastry so they come together in under an hour. Makes 12 pastries in about 50 minutes.

Baking tools for this recipe

Instructions

  1. Heat the oven to 425 F (220 C) and line two baking sheets with parchment.
  2. Unfold the pastry on a lightly floured surface and cut each sheet into six 10 cm (4 inch) squares, 12 in all.
  3. Make a diagonal cut from each corner toward the center, stopping about 1 cm (1/2 inch) from the middle.
  4. Spoon a heaping teaspoon of jam (about 12 g) into the center of each square.
  5. Fold every other corner into the center to form a pinwheel and press the points lightly into the jam so they hold.
  6. Chill the shaped pastries on the sheets for 15 minutes so they hold their shape in the oven.
  7. Brush with the egg wash and bake 10 to 12 minutes until puffed and deep golden.
  8. Cool 5 minutes on a rack and dust with powdered sugar.

Tips

  • Use a thick jam; thin jam bubbles over and burns on the pan.
  • Keep the pastry cold; if it softens, return it to the refrigerator for 10 minutes.
  • Press the center points down firmly so the pinwheels do not unfold.
  • Good with hot coffee or glogg.
