Baking tools for this recipe

Instructions

  1. Whisk the rice flour, sugar and salt with the water until smooth.
  2. Pour into a heatproof dish lined with parchment and steam over boiling water, covered, for 15 minutes. Stir and steam 5 to 10 minutes more, until the batter turns into a translucent, sticky dough with no white spots.
  3. Mix the soybean powder, sugar and salt, and sprinkle half onto a tray or board.
  4. Turn the hot dough out onto the powder. With a wet wooden spoon or rolling pin, knead and pound the dough for 2 to 3 minutes, until stretchy and smooth.
  5. Roll the dough into a rectangle about 1/2 inch (1.25 cm) thick, dusting with powder so it does not stick.
  6. Cut into 24 bite-size pieces with an oiled knife or scissors, then toss in the remaining soybean powder.

Tips

  • Dip the spoon in cold water often; the dough sticks badly.
  • Eat the same day when it is softest.
  • You can use finely ground toasted peanuts or sesame if you cannot find soybean powder.
  • Good with green tea.
