Baking tools for this recipe
Instructions
- Heat the oven to 350 F (175 C). Line two baking sheets with parchment and sift together the flour, cocoa, baking powder and salt.
- Beat the eggs and sugar 5 minutes until thick and pale and the batter falls in a ribbon. Fold in the dry ingredients, then the melted butter, milk and vanilla.
- Drop 16 level tablespoons of batter, evenly spaced, onto the sheets and spread each to a 3-inch (7.5 cm) round. Bake 8 to 10 minutes until they spring back. Cool completely.
- For the marshmallow, boil the sugar, corn syrup and water in a small saucepan to 240 F (116 C). While it heats, whip the egg whites to soft peaks.
- With the mixer running, stream the hot syrup down the side of the bowl into the whites. Add the bloomed, melted gelatin and vanilla and whip on high until stiff and cooled, about 8 minutes. The hot syrup cooks the whites.
- Pipe or spread a thick dome of marshmallow on 8 cakes, top with the other 8, and chill 30 minutes until firm.
- Melt the chocolate with the coconut oil to 115 F (46 C). Set each pie on a fork over the bowl, coat it with chocolate, and rest on parchment. Chill 20 minutes until set.
Tips
- The syrup must reach 240 F (116 C) to cook the egg whites and keep the marshmallow stable.
- Chill the sandwiches before dipping so the filling does not slide.
- Work fast on the chocolate coat; thin chocolate sets with a snap.
- Cook the sugar syrup to 240 F (116 C) and beat it into the whites so they reach a safe temperature; do not use raw egg whites.
