Baking tools for this recipe

Instructions

  1. Make the flan: heat the 60 g sugar in a small pan without stirring until it is a deep amber caramel, then pour into a 6-inch round heatproof dish (or llanera) and tilt to coat.
  2. Whisk the yolks gently with the condensed milk, evaporated milk and vanilla until smooth; strain into the dish and cover tightly with foil.
  3. Steam over simmering water, or bake in a water bath at 325 F (160 C), for 35 to 40 minutes, until the center is just set and reads at least 160 F (71 C).
  4. Cool, then chill at least 4 hours. Run a knife around the edge and invert onto a plate; slice into wedges.
  5. Divide the beans, nata de coco, jelly cubes and diced banana among four tall glasses.
  6. Heap shaved ice over the toppings and pour about 60 ml chilled evaporated milk over each.
  7. Top each with a spoonful of ube halaya, a slice of flan and the rice crisps, and serve immediately with a long spoon, mixing before eating.

Tips

  • Shave the ice finely and serve right away.
  • Ube halaya can be found jarred at Asian grocers.
  • Keep the flan chilled until the last minute.
  • Egg custard should reach 160 F (71 C); keep the flan refrigerated and discard after 3 days.
