Instructions

  1. While fresh brewed coffee is hot, dissolve the sugar into it.
  2. Chill the sweetened coffee, then pour into a shallow freezer-safe tray and freeze.
  3. Every 30 minutes, scrape forming ice crystals with a fork for 2–3 hours until fluffy granita is formed.
  4. For this original vanilla adaptation, add 3 ml pure vanilla extract to the prepared base and stir or blend until evenly dispersed; if it is a spice or chopped solid, hydrate, infuse or melt it in the warm phase, then strain if necessary.
  5. Whip the cream lightly and layer the granita and cream into two chilled glasses; finish with grated chocolate.

Tips

  • Contains a possible caffeine source; exact caffeine per serving varies with products and extraction.
