Instructions
- Whisk the sugar, cream, egg, cardamom and salt in a large bowl. Slowly beat in the cooled melted butter until smooth.
- Stir in the flour just until a soft dough forms. Pat into a disk, wrap and chill for at least 30 minutes.
- Heat a goro iron according to its directions (an electric iron to medium, or a stovetop iron over medium heat) until a drop of water sizzles.
- On a lightly floured surface, roll about a third of the dough to 1/16 inch (2 mm) thin and cut shapes slightly larger than the iron. Keep the rest chilled.
- Place one piece on the iron, close and bake 1 to 2 minutes per side until pale golden and the pattern shows.
- Trim the ragged edges while the cookie is warm, then move to a rack. Repeat with the remaining dough.
- Cool completely; the cookies crisp as they cool.
Tips
- Roll as thinly as you can without tearing; thick dough bakes up soft.
- A krumkake iron works if you lack a goro iron.
- Steam escapes when you open the iron, so lift the lid carefully.
- Good with coffee or mulled drink.
