Baking tools for this recipe
Instructions
- Line an 8-inch square pan with parchment, leaving overhang on two sides.
- Put the chopped chocolate in a heatproof bowl. Heat the cream in a small saucepan until it just begins to steam at the edges, about 175 F (80 C); do not boil.
- Pour the hot cream over the chocolate, wait 1 minute, then stir slowly from the center outward until completely smooth.
- Stir in the butter, vanilla and salt until the butter melts and the mixture is glossy.
- Scrape into the pan and smooth the top. Refrigerate 2 hours until firm enough to cut.
- Lift out by the parchment, dust the top thickly with cocoa through a sieve, and cut into 6 by 6 squares with a hot, dry knife, wiping between cuts.
- Roll the cut sides lightly in more cocoa if desired and keep chilled until serving.
Tips
- Warm the knife under hot water and dry it so the edges stay sharp.
- Serve cool but not cold; 10 minutes out of the fridge gives the best melt.
- For a milk chocolate version, reduce the cream by 1 tablespoon so it still sets.
- Cream-based ganache is perishable; keep it refrigerated and discard after 5 days.
