Baking tools for this recipe

Instructions

  1. Rub the rice flour, salt and water together with your fingertips until the mixture clumps and looks like damp sand.
  2. Line a steamer basket with cheesecloth or parchment with holes and spread the crumbs in an even layer. Steam over high heat 30 minutes, until the dough is cooked, translucent and no dry flour remains.
  3. Transfer the hot dough to a bowl. Using damp or gloved hands (it is very hot) and a sturdy spoon, knead and pound it 5 minutes until smooth and sticky.
  4. Oil the work surface with sesame oil. Divide the dough into four pieces and roll each into a log about 1 inch (2.5 cm) thick and 12 inches (30 cm) long.
  5. Set the logs on an oiled tray and let them firm up uncovered, 6 hours or overnight.
  6. Slice into thin ovals on a diagonal for soup, or cut into short pieces for stir-fries.

Tips

  • Use rice flour made for tteok; regular rice flour is too fine for this texture.
  • Knead while the dough is hot; as it cools it stiffens and will not smooth out.
  • Cook the sliced pieces in simmering broth for a few minutes until they float and soften.
