Baking tools for this recipe

Instructions

  1. Toss the grated papaya with the salt and cover with warm water. Rub it with your hands for a few minutes, then soak 30 minutes to draw out the bitter milky sap.
  2. Drain, rinse under cold running water and squeeze out as much liquid as you can. Repeat the rinse once more until the papaya tastes mild.
  3. In a wide heavy pot, melt the rapadura with the water over medium heat, stirring until dissolved.
  4. Add the cloves, cinnamon stick and papaya and bring to a gentle boil.
  5. Cook uncovered over medium-low heat for 50 to 60 minutes, stirring every 5 to 10 minutes, until the papaya is translucent and soft and the syrup is thick enough to leave a trail when you drag a spoon through it.
  6. Stir constantly in the last 10 minutes so it does not scorch. Remove the cinnamon stick and cloves if you like.
  7. Cool in the pot, then spoon into a clean container.

Tips

  • Use truly green, hard papaya; ripe fruit turns to mush.
  • Rapadura is less refined than white sugar, so expect a darker, slightly smoky flavor.
  • Add a splash of water if the syrup thickens before the papaya is tender.
  • Refrigerate or freeze; do not store at room temperature for long keeping, and do not can without an approved canning procedure.
