Fried Ice Cream
Fried ice cream is a ball of frozen vanilla in a crisp cinnamon cornflake shell, fried so briefly that the ice cream stays cold inside. Two coats of crumbs make the shell strong enough to hold. Makes 6 balls in about 6 hr 10 min.

Baking tools for this recipe

Instructions

  1. Scoop the ice cream into 6 tight balls onto a parchment-lined tray and freeze at least 3 hours until rock hard.
  2. Mix the cornflake crumbs, cinnamon and sugar in a shallow bowl. Put the flour in a second bowl and the beaten eggs in a third.
  3. Roll each frozen ball in flour, then egg, then crumbs, pressing to coat fully. Freeze 30 minutes, then repeat the egg and crumb coating for a thick shell, and freeze at least 2 more hours.
  4. Heat the oil in a deep pot to 375 F (190 C) and keep it there with a thermometer.
  5. Fry one ball at a time, lowering it in with a slotted spoon, for 10 to 15 seconds until the crust is deep golden. Drain on paper towels.
  6. Serve at once in small bowls with whipped cream and a line of honey.

Tips

  • The ice cream must be rock solid before frying.
  • Fry only one ball at a time so the oil stays hot.
  • Use a thermometer to keep the oil near 375 F (190 C) and never leave hot oil unattended.
  • Good with honey.

Recipe FAQ

How long does it take to make fried ice cream?

Plan on 30 minutes of prep and 10 minutes of cooking, plus 5 hours 30 minutes to chill. The recipe makes 6 balls.

How should I store fried ice cream?

Best fried to order; the coated unfried balls keep frozen up to 3 days.

Can I make fried ice cream ahead?

Yes. It needs time to chill and set, so it is a good one to make the day before you serve it.

Can I use a different form of vanilla?

Yes. This recipe uses 4.25 cups vanilla ice cream, 6 firm scoops, frozen solid (600 g). Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.

Serve it with honey.
