Baking tools for this recipe

Instructions

  1. Whisk the flour, sugar, baking powder and salt in a large bowl.
  2. In a second bowl, whisk the milk, egg, melted butter and vanilla.
  3. Pour the wet mixture into the dry and stir just until combined; small lumps are fine. Rest 5 minutes.
  4. Heat a griddle or large skillet over medium heat (about 375 F / 190 C) and brush with butter.
  5. Scoop 1/4 cup (60 ml) of batter per pancake onto the griddle. Cook 2 to 3 minutes until bubbles form and the edges look set.
  6. Flip once and cook 1 to 2 minutes more until golden and cooked through. Serve hot with butter and maple syrup.

Tips

  • Do not overmix; it makes pancakes tough.
  • Flip only once.
  • Keep finished pancakes warm in a 200 F (95 C) oven.
  • Good with coffee.
