Baking tools for this recipe

Instructions

  1. Soak the prunes in the rum (or hot tea) for 30 minutes while you prepare the rest.
  2. Heat the oven to 350 F (175 C) and butter a 9-inch (23 cm) round baking dish.
  3. Melt the butter over medium heat until it foams and smells nutty. Cool.
  4. Whisk the flour, sugar and salt. Make a well, whisk in the eggs one at a time, then add the milk in 3 parts until smooth. Stir in the vanilla and cooled butter.
  5. Spread the prunes over the dish, then pour in the batter slowly.
  6. Bake 35 to 40 minutes, until the top is deep brown and the center is just set; it should reach 160 F (71 C).
  7. Cool at least 30 minutes; serve lukewarm or at room temperature.

Tips

  • Resting the batter 30 minutes gives a smoother texture.
  • Use hot tea instead of rum for an alcohol-free version.
  • Dusting with powdered sugar is traditional.
  • Bake until the custard reaches 160 F (71 C) and refrigerate leftovers.
