Baking tools for this recipe

Instructions

  1. Whisk the rice flour, tapioca starch, sugar and salt. Make a well and add the egg, 30 ml oil, coconut milk and cold water. Stir until smooth, rest 10 minutes, then strain. Stir in the sesame seeds.
  2. Heat the frying oil to 350 F (175 C) in a deep pot. Lower the flower mold into the oil for about 1 minute to heat it.
  3. Lift the hot mold, tap off excess oil on a paper towel, and dip it into the batter so it coats the sides and bottom but does not cover the top.
  4. Immediately lower it into the oil. After about 5 seconds, shake gently to release the cookie.
  5. Fry the cookie 20 to 30 seconds per side, until light golden and crisp. Re-dip the mold between cookies, reheating it in the oil.
  6. Lift out with tongs, drain on a rack or paper towels, then cool completely so they crisp.

Tips

  • Keep the batter stirred; the flour settles.
  • If batter will not release, the mold is not hot enough.
  • Cold batter fries crisper, so keep it in a bowl over ice.
  • Keep frying oil at 350 F (175 C) and never leave it unattended.
