Instructions
- Whisk pasteurized egg yolks, sugar and cornstarch until no dry pockets remain.
- Warm the milk with unsweetened cocoa powder until steaming; temper one-third into the yolks, whisking constantly.
- Return everything to a saucepan and cook on medium-low, stirring and scraping the corners; bring the entire mixture to at least 160°F / 71°C, ensuring starch is cooked, without letting it scorch.
- Strain through a fine sieve; add 1–2 tablespoons warm milk only if needed for a drinkable texture.
- Pour warm, not scalding, into two heat-safe mugs; serve immediately.
Tips
- Take an actual temperature reading; thickening alone does not prove the eggs are safely cooked.
- Measure cornstarch accurately: increasing it turns a drink into spoonable pastry cream.
- Pasteurized yolks plus cooked base reaching at least 160°F / 71°C; refrigerate prompt leftovers.
- Good with cookies, cakes, and pastries.
