Baking tools for this recipe
Instructions
- Lightly oil a sheet of parchment, a small press (such as a flat-bottomed cup) and a cookie cutter.
- Melt the sugar in a small ladle or small pan over low heat, stirring gently, until it turns amber, 3 to 4 minutes. Take care: hot sugar causes severe burns.
- Off the heat, stir in the baking soda; the candy will foam up and lighten.
- Pour onto the parchment, press flat immediately with the oiled press, and stamp the cutter in gently.
- Cool 5 minutes until set and crisp.
Tips
- Do not overcook; dark sugar tastes bitter.
- Work quickly after adding soda.
- Soak the pan in hot water to clean.
- Molten sugar can exceed 300 F (150 C); keep children away and never touch the hot candy with bare hands.
