  • ¼ cup (50 g)granulated sugar

Baking tools for this recipe

Instructions

  1. Divide the bean paste into 8 equal balls (about 25 g each) and roll smooth. Cover and set aside.
  2. In a heatproof bowl, whisk the rice flour, sugar and water until completely smooth.
  3. Cover with a lid or foil and steam over boiling water 15 minutes, stirring once halfway, until the dough is translucent and sticky. (Alternatively, microwave covered in 1-minute bursts, stirring each time, for about 3 minutes.)
  4. Dust a tray generously with starch. Scrape the hot dough onto it with a wet spatula, dust the top with more starch and let it cool 5 minutes.
  5. Cut into 8 pieces. With floured hands, flatten each into a 3-inch round, place a ball of filling in the center and pinch to seal.
  6. Turn seam side down, brush off excess starch and serve at room temperature the same day.

Tips

  • Keep your hands and tools dusted with starch; the dough is very sticky.
  • Work while the dough is warm for easier stretching.
  • Do not refrigerate; mochi hardens in the cold.
  • Cook the rice flour dough fully until translucent; it should not taste raw.
