Baking tools for this recipe
Instructions
- Bring about 2 inches (5 cm) of water to a gentle simmer in a saucepan.
- In a large heatproof bowl that sits over (not touching) the water, whisk the yolks, sugar and salt until pale.
- Whisk in the Marsala and set the bowl over the simmering water, lifting it off the heat if the water boils hard.
- Whisk constantly and vigorously for 8 to 10 minutes, until the mixture triples in volume, forms soft ribbons and an instant-read thermometer reads 160 F (71 C).
- Remove from the heat at once and whisk 1 minute more to cool slightly.
- Divide among four glasses and serve warm with the ladyfingers on the side.
Tips
- Never let the bowl touch the water or the yolks will scramble.
- Keep whisking all the way into the corners of the bowl.
- Serve right away; it deflates as it stands.
- Cook yolks to 160 F (71 C) to reduce the risk of Salmonella, and serve promptly.
