Baking tools for this recipe

Instructions

  1. Line an 8-inch (20 cm) square pan with parchment and lightly oil it.
  2. Sprinkle the gelatin over the cold water in a small bowl and let it bloom 5 minutes.
  3. Combine the sugar, corn syrup and the second measure of water in a heavy saucepan. Stir over medium heat until the sugar dissolves, then cook without stirring to 230 F (110 C) on a candy thermometer.
  4. Remove from the heat, stir in the gelatin until fully dissolved and smooth, then stir in the flavoring and color.
  5. Let the foam settle for a minute, skim it off and pour into the pan.
  6. Let it set uncovered at room temperature for 24 hours until firm.
  7. Turn out, cut into 3/4-inch (2 cm) cubes with an oiled knife and toss in sugar. Spread on a rack and let dry for another 24 hours, turning once, so the outsides become lightly crisp.

Tips

  • Skim the foam for clear, glossy candies.
  • Use a wet or oiled knife to cut cleanly.
  • Humid days slow the drying; a fan helps.
  • Sugar syrup reaches 230 F (110 C) and causes serious burns; handle carefully.
