Baking tools for this recipe

Instructions

  1. Whisk the flour, sugar, baking powder and salt in a bowl.
  2. Whisk the milk, egg, melted butter and vanilla in another bowl.
  3. Pour the wet into the dry and stir just until combined; lumps are fine. Rest 5 minutes.
  4. Heat a griddle or large skillet over medium heat (about 375 F / 190 C) and lightly grease.
  5. Pour 1/4 cup batter per pancake. Cook 2 to 3 minutes until bubbles form and the edges look set.
  6. Flip and cook 1 to 2 minutes more until golden brown and cooked through.
  7. Serve right away or hold in a 200 F (95 C) oven.

Tips

  • Overmixing makes tough pancakes.
  • The first pancake is a test; adjust the heat.
  • Add 1 to 2 tablespoons milk if the batter gets too thick on standing.
  • Good with maple syrup.
