Instructions

  1. In the bowl of a stand mixer fitted with the dough hook, combine the flour, instant yeast, salt, and 1/2 cup (100 g) of the granulated sugar with 1/2 teaspoon of the ground cinnamon.
  2. Add the cool water and vanilla extract, then mix on low speed until the dough just comes together, about 2 minutes. Increase speed slightly and knead for 5 minutes, until the dough is smooth and elastic.
  3. Shape the dough into a ball, cover with plastic wrap, and let it rest at room temperature for 30 minutes.
  4. Meanwhile, prepare the butter block by placing the cold unsalted butter between two sheets of parchment paper and pounding or rolling it into a 7-inch (18 cm) square. Chill until firm but pliable, about 30 minutes.
  5. Roll the rested dough into a 12-inch (30 cm) square on a lightly floured surface. Place the chilled butter block in the center of the dough, aligning corners, then fold the dough edges over the butter to form an envelope, sealing all edges.
  6. Roll the dough out gently into a 20-inch (50 cm) square. Sprinkle evenly with the remaining 1/4 cup (50 g) sugar and 1/2 teaspoon ground cinnamon.
  7. Fold the dough into thirds like a letter (turning the top third down and the bottom third up), then rotate 90 degrees and roll again to 20 inches (50 cm). Repeat the folding with sugar and cinnamon sprinkled again. Wrap the dough in plastic wrap and chill for 1 to 2 hours until firm.
  8. After chilling, roll the dough out to 20 inches (50 cm), sprinkle a final time with the remaining sugar and cinnamon, fold once more into thirds, and chill again for 30 minutes.
  9. Preheat the oven to 400°F (200°C).
  10. Roll the dough out to a 12 x 8-inch (30 x 20 cm) rectangle. Cut into 12 equal squares. Place each square into a buttered muffin tin cup or shape into rounds on a baking sheet.
  11. Bake the Kouign-Amann pastries for 35 to 45 minutes, rotating halfway through, until they are deeply golden, caramelized, and crisp on top.
  12. Remove from the oven and immediately invert the pastries onto a wire rack to cool slightly before serving.
