Instructions
- In a medium saucepan, combine water, unsalted butter, granulated sugar, and fine sea salt. Split the vanilla bean and scrape seeds into the saucepan. Heat over medium heat until the mixture just comes to a boil and the butter is fully melted.
- Remove from heat and immediately add all-purpose flour in one go, stirring vigorously with a wooden spoon until the dough gathers into a smooth ball and pulls from the sides of the pan.
- Transfer the dough to a stand mixer bowl. Let it cool for 10 minutes to reduce temperature slightly.
- With the mixer on low speed, add eggs one at a time, mixing well after each addition until the dough is smooth and shiny and holds stiff peaks but is still pipeable.
- Heat the neutral oil in a deep heavy pot or deep fryer to 375°F (190°C), using a thermometer to monitor.
- Fit a large star tip to a piping bag and fill with the dough. Pipe 4 to 6 inch strips directly into the hot oil, cutting with scissors or a knife. Fry in batches, turning occasionally, until the churros are golden and crisp, about 3 to 4 minutes.
- Remove with a slotted spoon and drain on paper towels.
- Mix granulated sugar and cinnamon in a large bowl for coating. While warm but not hot, roll each churro in the cinnamon sugar to coat thoroughly.
- For the filling, warm the dark chocolate ganache infused with vanilla bean until pourable but not hot.
- Fit a small round tip to a clean piping bag and fill it with warmed ganache. Insert the tip into one end of each churro and gently pipe until filled.
