Baking tools for this recipe

Instructions

  1. Beat the butter, powdered sugar, cream, vanilla and salt until a smooth, firm paste forms.
  2. Roll into 30 small balls (about 12 g each) on a parchment-lined tray and chill until firm, about 1 hour.
  3. Melt the chocolate with the coconut oil gently over simmering water to 115 F (46 C), then cool to about 90 F (32 C) while stirring.
  4. Dip each center using a fork, tap off excess and set on parchment.
  5. Chill 15 minutes until set. Use extra chocolate to drizzle on top, if you like.

Tips

  • Roll with cool hands or chill the paste if it softens.
  • Keep the chocolate warm enough to stay fluid but not hot.
  • Add a little espresso powder for a different flavor.
  • Good with coffee.
