Instructions
- Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife.
- In a medium saucepan, combine the whole milk, heavy cream, sugar, salt, vanilla bean seeds and pod. Warm the mixture over medium heat, stirring occasionally, until the sugar is dissolved and the mixture reaches 170–175°F (77–79°C). Do not boil.
- Remove the pan from heat and stir in the vanilla extract. Cover and refrigerate the custard base until thoroughly chilled, about 2 hours.
- Remove the vanilla bean pod, then transfer the chilled custard to an ice cream maker and churn according to the manufacturer’s instructions until thickened, about 20–25 minutes.
- During the last 5 minutes of churning, add the semi-sweet chocolate chips to incorporate evenly.
- Transfer the ice cream to a freezer-safe container and freeze for at least 1 hour to firm up before serving.
