Baking tools for this recipe
Instructions
- Whisk the eggs and sugar in a bowl until the sugar dissolves, then whisk in the milk.
- Sift the barley flour and baking powder together and mix into the wet ingredients until smooth. Add a splash more milk if the batter is stiff; it should drop easily from a spoon.
- Heat a nonstick skillet over low heat and wipe lightly with oil.
- Spoon about 2 tablespoons of batter into the pan to make a 3-inch (8 cm) pancake. Cook until bubbles form, 2 to 3 minutes, then flip and cook 1 to 2 minutes more.
- Repeat with the remaining batter, making 16 pancakes. Cool them on a rack.
- Spread about 1 1/2 tablespoons red bean paste on 8 pancakes, top with the remaining pancakes and press gently together.
Tips
- Keep the heat low so the pancakes brown evenly and do not burn.
- Wipe the pan with oil between batches.
- If you cannot find barley flour, check Korean grocers for chalbori garu.
- Good with green tea.
