Baking tools for this recipe

Instructions

  1. Heat the oven to 325 F (160 C). Line an 8-inch (20 cm) square pan with parchment extending over two sides.
  2. Mix the flour, sugar and salt, then work in the soft butter until a dough forms. Press evenly into the pan and prick with a fork.
  3. Bake 25 to 30 minutes until pale golden. Cool completely.
  4. For the caramel, melt the butter, brown sugar, condensed milk and syrup in a heavy saucepan over medium-low heat, stirring until the sugar dissolves.
  5. Bring to a gentle boil and cook, stirring constantly, until the caramel is golden and reaches 230 F (110 C), about 8 minutes.
  6. Pour the caramel over the cooled shortbread and spread level. Cool until set, about 1 hour.
  7. Melt the chocolate with the butter, spread over the caramel, and let it set at room temperature, then chill 1 hour.
  8. Use the parchment to lift out the slab and cut with a hot knife into 16 squares.

Tips

  • Stir the caramel constantly so it does not scorch.
  • Use a thermometer for consistent caramel.
  • Warm the knife in hot water for clean cuts through the chocolate.
  • Cook the caramel to 230 F (110 C); hot sugar causes severe burns.
