Baking tools for this recipe

Instructions

  1. Heat the oven to 350 F (175 C). Grease and line two 8-inch (20 cm) round pans.
  2. Cream the cake butter and sugar until pale, 4 minutes. Beat in the eggs one at a time, then the vanilla.
  3. Whisk the flour, baking powder and salt, then add to the batter in 3 additions alternating with the milk, mixing just until smooth.
  4. Bake 28 to 32 minutes until a toothpick comes out clean. Cool 10 minutes, turn out and cool completely.
  5. Beat the buttercream butter 3 minutes, add the powdered sugar a little at a time, then the milk, vanilla and salt, and beat 4 minutes until light. Tint if you like.
  6. Stack the layers with some buttercream between, then coat thinly with buttercream and chill 30 minutes.
  7. Fit a piping bag with a large open star tip (like a 1M) and fill it with buttercream.
  8. Pipe rosettes starting at the center and spiraling outward, 2 inches (5 cm) wide, working around the sides and then the top, packed tightly together.

Tips

  • Practice a few rosettes on parchment first to get the pressure even.
  • Keep the buttercream at a smooth, pipeable room temperature; if it gets soft, chill the bag briefly.
  • Chill the crumb-coated cake first so the piping goes onto a firm surface.
  • Good with cold milk.
