Ingredients
Scales from a half to a double batch; give a bigger batch a little more time.

Baking tools for this recipe
Instructions
- Mash the soft butter and flour together with a fork or your fingertips for 1 minute until a smooth, uniform paste forms, with no dry flour.
- Roll into marble-size balls (or leave as a paste) and keep cool until needed.
- Bring the liquid to a gentle simmer. Whisk in one ball at a time, letting each melt before adding the next.
- Simmer gently for at least 2 minutes after the last addition so the flour cooks through and the sauce turns glossy and loses any floury taste.
- Stop adding paste when the sauce lightly coats the back of a spoon; it will thicken a little more as it cools.
Tips
- Never dump the paste in all at once; it will clump.
- Use 1 tablespoon of paste per cup of liquid for a light body.
- Freeze unused balls on a tray for up to 3 months.
- Raw flour can carry bacteria. Do not taste the paste raw, and simmer it in the liquid for at least 2 minutes.
